To celebrate its 200th anniversary, Corvo has created a Riserva wine.

Corvo Riserva is an authentic example of DOC Sicilia wine, made from pure Nero d’Avola grapes.

It is a blend of wines aged for at least two years in concrete and wood.

Interesting facts about Nero d’Avola

Also known as Calabrese, it is without a doubt the native Sicilian grape variety par excellence, with around 12,000 hectares of vineyards in Sicily. This internationally renowned grape variety is grown in the central-western and south-eastern parts of Sicily. The bunch size varies from medium to large and the grapes have a blue-black skin. It is a very vigorous plant with a leaf that is medium to large in size.
Depending on the vinification process, wines made from Nero d’Avola grapes have a good acidity and excellent ageing potential, especially if the grapes are cultivated using the traditional bush training method. They are deep ruby red in colour, depending on the type of ageing, and have the typical aroma of marasca cherries or, in the longer-aged versions, spicy notes. Well-balanced in terms of acidity and smoothness, these wines have excellent body and tannins.

Vinification

Vinification takes place by controlling the fermentation temperature and maceration of the skins in order to extract the potential aromas and palatability developed on the vine. After vinification, the wine rests in concrete tanks, awaiting malolactic fermentation and enriching itself through the lysis of the fermenting yeasts

Ageing

Nero D’Avola Riserva is a blend of different ageing processes, with some wines ageing for at least two years in oak barrels, others in concrete vats and still others in steel containers to preserve their tannins. After the ageing process, they spend at least one month in the bottle before being put on the market
